
Effortless Chunky Chili
When it comes to comfort food, we are shameless and would gladly post this in 85 degree weather. But today is chilly…which calls for…well, you know!
Ingredients
- 2 cups veggie broth/stock
- 16 oz. Country Life Bean Soup Mix
- 1 can stewed or diced tomatoes (do not strain)
- 15 oz. garbanzo beans (do not strain)
- 1 cup sweet corn
- 2 cups TVP steak strips
- 1 cup tomato puree
- 1/4 cup extra virgin olive oil (optional — use more broth or just water if more liquid is needed)
- 3 bay leaves
- 2 garlic cloves, minced
- 1 tbsp cumin
- 1 tbsp chili powder
- chopped sweet pepper
- 1 tsp salt (optional)
- 1/2 cup brown sugar (optional — helps cut heat and adds sweet!)
Throw all ingredients in a crock pot, slow cook for a couple hours, mess with seasonings for fun, and curl up with tortilla chips and a big bowl for a snuggle-blanket-worthy evening in your slippers.
