2 can coconut milk

1 cup vegetable broth

1/2 block of tofu drained and cubed

1 12-oz package of broccoli (frozen)

1 large green bell pepper (sliced)

1 medium yellow onion (chopped)

4 cloves of garlic (minced)

juice of 1 lime + more for serving

2 T honey

2–3 T red curry powder

Pinch of cinnamon

1/4 C salsa (mild)

1 tsp turmeric

1/4 tsp salt ( or to taste)

5–6 basil leaves ( chiffonade cut)


In a medium sized pot heat a bit of olive oil (or desired oil) and sauté onions and garlic. About 3–4 minutes.

Add peppers and sauté a couple more minutes.

Add coconut milk, lime juice, and broth and cook for 2–3 minutes

Add tofu, broccoli, salsa, honey, basil, and seasonings.

Mix well and simmer for about 20 minutes (It tastes better the longer you let it cook together)

Serve over rice with a wedge of lime and some basil! Enjoy!
