
Pumpkin Pancakes
Sunday morning, a chill in the air, pumpkin pancakes are the best and are sure to become a cherished family memory of delightful time spent together. Served with a little whipped cream or syrup and sprinkled with pumpkin seeds or nuts, what could be better?
Ingredients
* 2 cup oats
* 1 cup almond milk
* 3/4 cup of canned pumpkin
* 1 flax egg
* 2 T maple syrup
* 2 T apple cider vinegar
* 1 T baking powder
* 2 tsp pure vanilla
* 1/2 tsp salt
* 1/2 tsp cinnamon
* 1/2 tsp pumpkin pie spice
Directions:
In blender, blend oats into a powder. Add salt and baking powder and pulse until mixed. Add remaining ingredients and blend. Pour on griddle and make a pancake. Enjoy!
**adjust cinnamon + pumpkin pie spice to preferred taste
**If batter sits for a bit, it will become thick. If so, just add a bit more milk
**how to make 1 flax egg:
1 tbsp ground flax seed
2.5 tbsp water
Stir and let sit for 5 minutes.
