* 6 cups of vegetable broth
* 4 sweet potatoes (7 cups), chopped
* 1 onion, chopped
* 4 carrots, chopped
* 1 apple, peeled & chopped
* 1 inch of fresh ginger, peeled & chopped
* 1 can of coconut milk
* 1/2 tsp cinnamon
* 1/4 tsp nutmeg
* Pumpkin seeds for topping
In large pot, heat veggies & broth until veggies are soft. Add coconut milk, cinnamon, and nutmeg. Heat in pot for 10 minutes. Blend in high-speed blender until pureed. Serve with pumpkin seeds as topping. ENJOY!
