Filled with the goodness of the Earth and the tastes of fall, this Sweet Potato Soup is warm and thick with sweet potatoes, carrots, apples, coconut milk, ginger and nutmeg. Sprinkled on top with pepitas or yummy pistachio nuts, this simple comfort food will fill your home with the smells of autumn and is the perfect treat to take on a fall picnic.

Ingredients:

* 6 cups of vegetable broth

* 4 sweet potatoes (7 cups), chopped

* 1 onion, chopped

* 4 carrots, chopped

* 1 apple, peeled & chopped

* 1 inch of fresh ginger, peeled & chopped

* 1 can of coconut milk

* 1/2 tsp cinnamon

* 1/4 tsp nutmeg

* Pumpkin seeds for topping

Directions:

In large pot, heat veggies & broth until veggies are soft. Add coconut milk, cinnamon, and nutmeg. Heat in pot for 10 minutes. Blend in high-speed blender until pureed. Serve with pumpkin seeds as topping. ENJOY!
